Labour-cost percentage = total included labour cost ÷ net sales × 100. Keep sales tax out of the sales basis. Keep employee tips separate unless your accounting treatment and this review intentionally include them.

Should tips be included?

Often tips that pass through to employees are kept separate. Use the switch only when the restaurant’s accounting treatment and the purpose of this review intentionally include them.

What is a good restaurant labour-cost percentage?

There is no universal healthy percentage. Concept, service level, location, wage mix, management treatment, season, training, and demand all change the result. Compare a consistent internal target with actual service evidence.
